stone edging and mulch

If using a stone edging on landscaped flower beds how high should the stone be stacked? This isn't a terraced bed but on level ground. I have had some problems with it being too low and the mulch coming through and into the grass over time. How do you prevent that? I like field stone but is there another stone that would go well with field stone. I have some field stone edging but would like to use something different on another bed. Thank you for your help.
Doug says it should be tall enough to contain the mulch. So if you have 3 inches of mulch - then you want to have a 3-inch tall barrier (or even a touch higher). There's no "this tall" rule - it has to be made on the basis of what the garden is doing and how it is being run. No mulch - means a much lower barrier.
